Veggie Soup

Ingredients

  • 3 cups water
  • 1 shallot sliced (or yellow onion)
  • 1 carrot chopped
  • 1 tomato chopped
  • Splash of white balsamic vinegar
  • a bunch of tuscan kale (or similar with crinkly leaves, like savory)
  • 8 cloves of garlic, peeled and chopped
  • 1/2 cup frozen peas
  • Fresh green herbs like basil
  • olive oil 

Directions

  1. Boil onions and carrots in water. Add tomato. Add vinegar.
  2. After 20 minutes add kale and simmer for few more minutes.
  3. At end of cooking add garlic and peas
  4. Add water to dilute as needed. Season with salt and pepper to taste.
  5. Add torn basil leaves. drizzle with olive oil before serving.
