Ingredients
- 3 cups water
- 1 shallot sliced (or yellow onion)
- 1 carrot chopped
- 1 tomato chopped
- Splash of white balsamic vinegar
- a bunch of tuscan kale (or similar with crinkly leaves, like savory)
- 8 cloves of garlic, peeled and chopped
- 1/2 cup frozen peas
- Fresh green herbs like basil
- olive oil
Directions
- Boil onions and carrots in water. Add tomato. Add vinegar.
- After 20 minutes add kale and simmer for few more minutes.
- At end of cooking add garlic and peas
- Add water to dilute as needed. Season with salt and pepper to taste.
- Add torn basil leaves. drizzle with olive oil before serving.
