Shrimp with Tomatoes and Feta

This dish is great on a bed of orzo pasta.  From the "North Shore Collection".

Ingredients

  • 2 lbs large shrimp, peeled and deveined
  • 2-3 cloves garlic, crushed
  • 1/2 tsp dried oregano
  • 1/2 tsp salt
  • 1/2 teaspoon red pepper flakes
  • 2 tbsp butter
  • 2 tbsp oil
  • 1 cup white wine
  • 1 cup Italian plum tomatoes, seeded and chopped
  • 3-4 oz feta cheese, crumbled
  • 2 tbsp fresh parsley, chopped

Directions

In a large, heavy skillet, saute the shrimp, garlic, oregano, salt and red pepper in the butter and oil for 3 minutes. Remove the shrimp with a slotted spoon. Set aside.

Pour wine into skillet and reduce liquid to 1/2 cup over high heat.  Add tomatoes and heat through. Return shrimp to the skillet, sprinkle with feta cheese, cover and cook over medium heat 10-15 minutes.

Taste and adjust seasoning.  Sprinkle with chopped parsley and serve immediately.
