Ingredients
- 2 broccoli crowns, cut into bite sized pieces
- 4 small red potatoes, cut into bite sized pieces
- 5 cloves garlic, chopped fine
- 2 Tbsp extra virgin olive oil
- 1 tsp salt
- 1 tsp dried oregano
- 1 tsp dried basil
- 1 tsp dried thyme
- 1/4 tsp dried Rosemary
- 1/4 tsp black pepper (optional)
- 1/8 tsp cayenne pepper (optional)
- 1 tsp lemon juice
- Parmesan cheese (Vegan)
Instructions

Preheat oven to 350 degrees

Put broccoli, red potatoes and garlic into a mixing bowl

Mix with 2 Tbsp of extra virgin olive oil

Mix 1 tsp of salt to the bowl

Mix in dried herbs

Spread the broccoli and potatoes evenly on a baking tray

Bake in the oven for 25-35 minutes or until the broccoli starts to brown and potatoes soft. Turn with spatula every 10 minutes

Remove from the oven and drizzle 1tsp of lemon juice on the veggies and toss gently

Grate Parmesan directly onto the veggies and serve immediately
