Provincial Potatoes and Broccoli

Ingredients

  • 2 tbsp chopped garlic
  • 2 tbsp olive oil
  • 1 tbsp dijon mustard
  • 1 tsp dried rosemary
  • 1/2 tsp ground black pepper
  • Salt to taste
  • 1 head of broccoli. Cut into trimmed stems and florets
  • 1 lb red potatoes. Cut into 1/4s or 1/8s
  • Feta cheese

Directions

  1. Preheat oven with broiler to 400F with rack in middle
  2. Combine garlic, olive oil, mustard, rosemary and pepper in a bowl.
  3. Add potatoes to bowl and stir
  4. Add broccoli to bowl and stir.
  5. Add more oil olive and salt as desired.
  6. Transfer to rimmed baking sheet and arrange in single layer.
  7. Cover with foil and bake for 15 mins
  8. Remove foil and switch to broil. Broil for 5 mins and turn 180. After 5 more minutes, assess and remove when sufficiently charred.
  9. Serve hot in bowls sprinkled with feta cheese.
