Ingredients
- 2 tbsp chopped garlic
- 2 tbsp olive oil
- 1 tbsp dijon mustard
- 1 tsp dried rosemary
- 1/2 tsp ground black pepper
- Salt to taste
- 1 head of broccoli. Cut into trimmed stems and florets
- 1 lb red potatoes. Cut into 1/4s or 1/8s
- Feta cheese
Directions
- Preheat oven with broiler to 400F with rack in middle
- Combine garlic, olive oil, mustard, rosemary and pepper in a bowl.
- Add potatoes to bowl and stir
- Add broccoli to bowl and stir.
- Add more oil olive and salt as desired.
- Transfer to rimmed baking sheet and arrange in single layer.
- Cover with foil and bake for 15 mins
- Remove foil and switch to broil. Broil for 5 mins and turn 180. After 5 more minutes, assess and remove when sufficiently charred.
- Serve hot in bowls sprinkled with feta cheese.
