Ingredients
- 1 can chickpeas, drained
- 10 oz washed baby spinach
- 1/4 cup extra virgin olive oil
- 1 tsp coarse salt
- Juice of 1 lemon
- Feta cheese
- Tortillas
Directions
- On medium, heat large skillet with oil. Add chickpeas and cook for 2 minutes.
- Add spinach in bunches until just wilted.
- Turn off heat and add lemon juice and salt.
- Heat tortillas as you like
Serve immediately with tortillas and feta.
