Grilled cheese sandwich with shallots

Ingredients

  • 7 oz aged cheddar, cut into even chunks
  • 2 oz brie, rind removed
  • 2 tbsp dry white wine
  • 4 tsp minced shallot
  • 3 tbsp softened unsalted butter
  • 1 tsp dijon mustard
  • 8 slices hearty white bread

Directions

  1. Put cheese and wine in food processor. Process for 30 seconds.
  2. Add shallots. Pulse until combined.
  3. Heat 12 in non-stick skillet over medium heat for 2 minutes
  4. Butter bread, flip over half and spread with the cheese mixture
  5. Cook 6 to 9 minutes over medium low heat.
  6. Turn and cook additional 6 minutes.
  7. Let sit for 2 minutes for cheese to set
