Garlicky Roasted Shrimp with Parsley and Anise

Ingredients

  • Table salt
  • 2lbs jumbo 16/20 shrimp - unpeeled
  • 1/4 veg oil
  • 4 tablespoons unsalted butter, melted
  • 6 cloves minced garlic
  • 1 tsp anise seeds
  • 1/2 tsp red pepper flakes
  • 1/4 tsp black pepper
  • 2 tbsp chopped fresh parsley
  • lemon wedges

 

Directions

  1. Preheat broiler on high. 4" from heat
  2. Cut open back of the shrimp with scissors. Cut 1/2 further with paring knife. Devein while you are at it.
  3. Brine shrimp in 1 quart water with 1/4 cup table salt for 15 minutes
  4. Pat shrimp dry with paper towel
  5. Combine in large bowl oil, butter, anise, red pepper, black pepper
  6. Add shrimp, then the parsley.
  7. Toss throughly with hands, pushing some sauce into shrimp slit
  8. Put shrimp on wire rack in rimmed baking sheet
  9. Broil 2-4 minutes until spotty browned. Flip shrimp and return to broiler for 2 to 4 minutes.
  10. Serve immediately
