Fried eggs

Ingredients

  • 2 tsp veg oil
  • Large cold eggs
  • 2 tsp cold unsalted, in chunks
  • Salt and pepper

Directions

  1. Heat oil in skillet on low for 5 minutes. Use a large skillet so they are not crowded.
  2. Put 2 eggs each in a small bowl. Season with salt and pepper.
  3. Turn up heat to medium high until the oil begins to shimmer.
  4. Swirl butter to melt and then slide in the eggs at the same time
  5. Cover skillet and cook for 1 minute. Remove from heat. Leave heat on. Between 15 seconds and 2 minutes based how firm you like them
