Ingredients
- 2 tsp veg oil
- Large cold eggs
- 2 tsp cold unsalted, in chunks
- Salt and pepper
Directions
- Heat oil in skillet on low for 5 minutes. Use a large skillet so they are not crowded.
- Put 2 eggs each in a small bowl. Season with salt and pepper.
- Turn up heat to medium high until the oil begins to shimmer.
- Swirl butter to melt and then slide in the eggs at the same time
- Cover skillet and cook for 1 minute. Remove from heat. Leave heat on. Between 15 seconds and 2 minutes based how firm you like them
