Basic Crepes

Ingredients

  • 4 eggs
  • 2 1/2 cups low-fat milk
  • 1 1/4 cups flour
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 3 tablespoons butter, melted
  • 1/2 teaspoon vanilla (optional)
  • 1/4 teaspoon cinnamon

Directions

  1. In a large mixing bowl, beat the eggs with half the milk.
  2. Beat in flour, sugar and salt until smooth.
  3. Stir in melted butter, vanilla, cinnamon and remaining milk.
  4. Heat a crepe pan or large skillet with a small amount of vegetable oil.
  5. For each crepe, pour about 1/3 cup batter onto the pan and cook over medium heat 1 to 2 minutes.
  6. With a spatula, turn the crepe and cook until golden brown, about 1/2 minute.
